Ingredients:
For the Chicken:

1 lb chicken breast, cut into small pieces

1/4 cup cornstarch

2 tbsp oil (for frying)
For the Fried Rice:

2 cups cooked and chilled white rice

1/2 cup diced carrots

1/2 cup peas

2 green onions, chopped

2 cloves garlic, minced

2 eggs, lightly beaten

2 tbsp soy sauce

1 tbsp sesame oil (optional)
For the Bang Bang Sauce:

1/3 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to heat preference)

1 tsp honey or sugar

1 tsp rice vinegar or lime juice (optional)
Instructions:

Make the sauce: Whisk together mayo, sweet chili sauce, sriracha, honey, and vinegar/lime juice until smooth. Set aside.

Crisp the chicken: Toss chicken pieces in cornstarch, salt, and pepper. Fry in a skillet over medium-high heat until golden and crispy. Set aside on paper towels.

Cook the rice: In the same pan, add a little more oil if needed. Sauté garlic, carrots, and peas for 2–3 minutes. Push to the side, scramble the eggs, then mix everything together.
